{"id":13222,"date":"2021-11-11T15:41:21","date_gmt":"2021-11-11T15:41:21","guid":{"rendered":"https:\/\/vincentedelicacies.com\/?p=13222"},"modified":"2023-02-01T09:35:49","modified_gmt":"2023-02-01T09:35:49","slug":"la-fabrication-du-panettone","status":"publish","type":"post","link":"https:\/\/vincentedelicacies.com\/fr\/la-fabrication-du-panettone\/","title":{"rendered":"La fabrication du panettone"},"content":{"rendered":"<p style=\"text-align: justify;\">Aujourd'hui, nous voulons vous parler de la fabrication du panettone, un parfait m\u00e9lange d'exp\u00e9rience et de gestes manuels dont nos p\u00e2tissiers sont particuli\u00e8rement fiers.<\/p>\n<p style=\"text-align: justify;\">Le g\u00e2teau de panettone commence \u00e0 prendre vie au moment o\u00f9 na\u00eet la levure m\u00e8re, qui se nourrit et se transforme continuellement chaque fois que les mains habiles de nos ma\u00eetres p\u00e2tissiers s'en occupent, un soin constant que nous apportons depuis plus de 40 ans.<br \/>\nann\u00e9es.<\/p>\n<p style=\"text-align: justify;\">L'utilisation du levain au lieu de proc\u00e9d\u00e9s industriels rapides permet de cr\u00e9er un produit qui suit les rythmes de la nature et des m\u00e9thodes traditionnelles, comme une \u00e2me ancienne qui se transmet dans nos g\u00e2teaux de main en main et d'une g\u00e9n\u00e9ration \u00e0 l'autre.<br \/>\nde g\u00e9n\u00e9ration en g\u00e9n\u00e9ration.<\/p>\n<p style=\"text-align: justify;\">Nos g\u00e2teaux panettone sont laiss\u00e9s \u00e0 lever lentement pendant 36 heures, ce qui permet d'obtenir une p\u00e2te extraordinairement douce et parfum\u00e9e.<\/p>\n<p style=\"text-align: justify;\">Un chef-d'\u0153uvre qui, dans la phase suivante de la cuisson, prendra forme et consistance, devenant une excellence de douceur et de tendresse qui ne cessera, avec son parfum, d'enchanter le palais de ceux qui la go\u00fbteront.<\/p>\n<p style=\"text-align: justify;\">Mais venons-en au c\u0153ur du processus : une fois qu'une premi\u00e8re p\u00e2te a \u00e9t\u00e9 cr\u00e9\u00e9e, elle est bris\u00e9e en fonction de son poids et plac\u00e9e dans des moules qui sont ensuite conduits au processus de levage, l'un des moments les plus importants ; le premier processus de levage dure environ 12 heures.<\/p>\n<p style=\"text-align: justify;\">La p\u00e2te doit tripler de volume \u00e0 ce stade d\u00e9licat de la transformation. Il est tr\u00e8s important de ne pas perdre la structure lors de l'ajout des autres ingr\u00e9dients.
