{"id":13222,"date":"2021-11-11T15:41:21","date_gmt":"2021-11-11T15:41:21","guid":{"rendered":"https:\/\/vincentedelicacies.com\/?p=13222"},"modified":"2023-02-01T09:35:49","modified_gmt":"2023-02-01T09:35:49","slug":"die-herstellung-von-panettone","status":"publish","type":"post","link":"https:\/\/vincentedelicacies.com\/de\/die-herstellung-von-panettone\/","title":{"rendered":"Die Herstellung von Panettone"},"content":{"rendered":"<p style=\"text-align: justify;\">Heute m\u00f6chten wir mit Ihnen \u00fcber die Herstellung von Panettone sprechen, eine perfekte Mischung aus Erfahrung und Handarbeit, auf die unsere Konditoren besonders stolz sind.<\/p>\n<p style=\"text-align: justify;\">Der Panettone-Kuchen beginnt in dem Moment zu leben, in dem die Mutterhefe geboren wird, die jedes Mal, wenn sich die geschickten H\u00e4nde unserer Konditormeister um ihn k\u00fcmmern, gen\u00e4hrt wird und sich st\u00e4ndig weiterentwickelt - eine st\u00e4ndige Pflege, die wir seit mehr als 40 Jahren durchf\u00fchren.<br \/>\nJahre.<\/p>\n<p style=\"text-align: justify;\">Die Verwendung von Sauerteig anstelle von schnellen, industriellen Sauerteigverfahren bedeutet, ein Produkt zu schaffen, das dem Rhythmus der Natur und den traditionellen Methoden folgt, wie eine alte Seele, die in unseren Kuchen von Hand zu Hand und von Generation zu Generation weitergegeben wird.<br \/>\nGeneration zu Generation.<\/p>\n<p style=\"text-align: justify;\">Unsere Panettone-Kuchen werden bis zu 36 Stunden lang langsam aufgehen gelassen, was zu einem au\u00dfergew\u00f6hnlich weichen und duftenden Teig f\u00fchrt.<\/p>\n<p style=\"text-align: justify;\">Ein Meisterwerk, das in der n\u00e4chsten Phase des Kochens Form und Konsistenz annimmt und sich in eine hervorragende, s\u00fc\u00dfe und zarte Speise verwandelt, die mit ihrem Duft den Gaumen derjenigen verzaubert, die sie kosten.<\/p>\n<p style=\"text-align: justify;\">Aber kommen wir zum Kern des Prozesses: Sobald ein erster Teig entstanden ist, wird er in das richtige Gewicht gebrochen und in Formen gelegt, die dann zum G\u00e4rungsprozess gef\u00fchrt werden, einem der wichtigsten Momente; der erste G\u00e4rungsprozess dauert etwa 12 Stunden.<\/p>\n<p style=\"text-align: justify;\">In dieser heiklen Phase der Verarbeitung muss der Teig sein Volumen verdreifachen. Es ist sehr wichtig, dass die Struktur nicht verloren geht, wenn die anderen Zutaten hinzugef\u00fcgt werden. Dann beginnt das zweite Kneten, bei dem der zuvor zubereiteten Hefemasse ein Teil Mehl zugesetzt wird: Dies dient der St\u00e4rkung der Glutenstruktur vor der Zugabe weiterer Zutaten; nach dieser Phase l\u00e4sst man den Teig etwa 30-40 Minuten ruhen, und dann erfolgt die Portionierung entsprechend der Gr\u00f6\u00dfe der Papierform, d.h. eine leichte Formgebung vor dem eigentlichen Kneten.<\/p>\n<p style=\"text-align: justify;\">Dies ist ein wesentlicher Schritt f\u00fcr das Gelingen des Panettone: pirlare ist ein Begriff aus dem lombardischen Dialekt und bedeutet<br \/>\nabrunden.<\/p>\n<p style=\"text-align: justify;\">Und hier runden die geschickten H\u00e4nde unserer Konditoren jede Portion leidenschaftlich ab, so dass eine pralle, kompakte Teigkugel entsteht, die schnell in die Papierform \u00fcbertragen werden kann, um den endg\u00fcltigen G\u00e4rprozess zu beginnen, der zwischen 4 und 8 Stunden dauert.<\/p>\n<p style=\"text-align: justify;\">Danach geht der Teig in die Backphase \u00fcber.<\/p>\n<p style=\"text-align: justify;\">Nach dem Herausnehmen aus dem Ofen muss das Produkt mindestens 12 Stunden lang streng auf dem Kopf stehend abk\u00fchlen und dann in einer sorgf\u00e4ltig gestalteten Verpackung von Hand verpackt werden.<\/p>\n<p style=\"text-align: justify;\">Eine Emotion der Sinne, die schon vor dem Auspacken mit den Augen beginnt<\/p>\n<p style=\"text-align: justify;\">und f\u00e4hrt dann mit der Verkostung fort.<\/p>","protected":false},"excerpt":{"rendered":"<p>Heute m\u00f6chten wir mit Ihnen \u00fcber die Herstellung von Panettone-Kuchen sprechen, eine perfekte Mischung aus Erfahrung und Handarbeit...<\/p>","protected":false},"author":1,"featured_media":13224,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[1],"tags":[],"class_list":["post-13222","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-blog"],"yoast_head":"<!-- This site is optimized with the Yoast SEO Premium plugin v21.8 (Yoast SEO v26.6) -
